Królewiec-ciasto przekładane (Royal Layer Cake)



Ostatnio nasi znajomi poprosili nas o upieczenie tego ciasta. Jako że w moim rodzinnym domu ani mama ani też babcia nie piekły zbyt często przekładańców, nie miałam pojęcia jak się do tego zabrać. 
Przepis na ciasto znalazłam w internecie. Wypróbowałam kilka receptur i stworzyłam własną wersję królewca.
To przekładane ciasto składa się z dwóch warstw ciasta miodowego i biszkoptu. Blaty przełożone są masą budyniową przygotowywaną bez jajek i konfiturą najlepiej bardzo gęstą. 
Całość udekorowałam polewą z mlecznej czekolady i śmietanki. 
To ciasto jest pracochłonne ale też bardzo efektowne. Warto je przygotować na specjalne okazje kiedy to gościmy dawno nie widzianych gości albo uroczyste święta.


Ciasto Królewiec
na forme o wymiarach 20 X 30 cm

skladniki na 2 blaty ciasta miodowego: 

duze jajko 
2 lyzki miodu sztucznego 
300 g maki pszennej 
80 g cukru 
maslo 
lyzeczka sody oczyszczonej 
150 g masla


skladniki na biszkopt: 

4 jajka, bialka i zoltka osobno 
100 g maki pszennej 
100 g cukru pudru 
4 lyzki oleju 
3/4 lyzeczki proszku do pieczenia


skladniki na mase budyniowa: 

400 ml mleka pelnotlustego 
2 lyzki maki ziemniaczanej z czubem 
2 lyzki maki pszennej z czubem 
4 lyzki cukru 
nasionka z polowa laski wanilii
125 g masla niesolonego 

skladniki na czekoladowa polewe: 

200 g czekolady mlecznej 
120 ml smietanki slodkiej, 30 % tluszczu

dodatkowo: 
1/2 sloiczka dzemu truskawkowego 
1/2 sloiczka dzemu z czarnej porzeczki, dzemy laczymy w kubeczku

potrzebne beda jeszcze: 

2 formy o wym. 20 cm X 30 cm 
papier do pieczenia/ pergamin
pergaminem wykladamy dno foremek przed pieczeniem

Przygotowujemy ciasto miodowe
Skladniki laczymy i zagniatamy. Ciasto dzielimy na dwie czesci i wykladamy kazda czescia przygotowane foremki. Jezeli ciasto bedzie zbyt lepkie, nawilzamy dlonie lekko woda. Piekarnik nagrzewamy do 170 stopni. Ciasto pieczemy przez 15 minut az nabierze zlotobrazowego koloru. Blaty miodowe studzimy w formie i nastepnie ostroznie (ciasto jest lamliwe) wykladamy na blat kuchenny.

Przygotowujemy biszkopt. 
Ubijamy bialka na piane i dodajemy stopniowo cukier puder. Kiedy utworzy sie gesta lsniaca beza dodajemy zoltka i miksujemy tylko do polaczenia. Przesiewamy make z proszkiem do pieczenia. Przesiana make wsypujemy do ciasta biszkoptowego i laczymy delikatnie szpatulka. Wlewamy do ciasta olej wolnym strumieniem. Laczymy za pomoca szpatulki. Ciasto przekladamy do formy o wym. 20 cm X 30 cm. Pieczemy biszkopt w temp. 180 stopni przez okolo 20 -25 minut. Po czym rzucamy na blat. Studzimy. 

Przygotowujemy mase budyniowa. 
Mleko zagotowujemy z cukrem, maslem i wanilia.Jak tylko maslo sie rozpusci a mleko zacznie sie unosic wsypujemy make pszenna i ziemniaczana  i energicznie mieszamy drewniana lyzka nadal gotujac przez kolejne 3-4 minuty az powstanie budyn. W razie powstania grudek- blenderujemy mase na gladko. 

Przekladamy ciasto. 
Na dno formy, w ktorej pieklismy ciasto miodowe i biszkopt, wkladamy pierwsza warstwe ciasta miodowego. Smarujemy je dzemem. Na dzem wylewamy polowe masy budyniowej. Nastepnie nakladamy biszkoptem. Na biszkopt wylewamy reszte masy budyniowej. Te warstwe nakladamy drugim plackiem miodowym. Blat miodowy smarujemy dzemem.

Przygotowujemy polewe czekoladowa. 
Czekolade lamiemy w kosteczke w miseczce zaroodpornej. Zalewamy ja 120 ml smietanki slodkiej. Wstawiamy do mikrofalowki na 1-2 minuty. Wyjmujemy miseczke. Mieszamy czekolade ze smietanka. Wstawiamy do mikrofalowki na kolejna minute. Wyjmujemy i mieszamy rozpuszczona czekolade z goraca smietanka az utworzy sie gladka lsniaca polewa. Te ganache czekoladowa polewamy wierzch krolewca. 
Ciasto wstawiamy do lodowki na minimum 12h. Najlepiej smakuje po 2 dniach chociaz mozna je przechowywac w zimnym suchym miejscu az do 4 dni.
Przed podaniem ciasto kroimy ostrym goracym nozem. 


In English

This is one of the cakes that each houseproud Polish housewife should at least have heard of and most probably have tried visiting an auntie and uncle during Christmas or Easter holidays. The funny thing both my mom and grandma (the perfect home goddesses) had never ever made this cake at home. Only recently a friend of ours asked us to make this cake and I did not have any idea what he was talking about. So just nodding and smiling I went off ready to spend hours on the Internet hunting for the most perfect royal layer cake recipe. And here I am. After having tried a few I made my own. How scrumtious it tastes. Imagine yourself devouring a fine piece of beautifully compositioned layers of honey cake, sponge, not overly sweet jam, vanilla custard and chocolate ganache. All these things in one!  
I need to be honest with you folks and say OK this is not the least time-consuming to be made on earth but oh sugar! definitely worth the time and effort. So grab a pen and piece of paper and start your shopping list tonight. Promise- NO REGRETS. 

Royal Layer Cake
for a tin 20 cm by 30 cm

ingredients for the honey cake: 

300 g plain (all-purpose) flour 
80 g caster sugar 
1 tsp baking soda
1 medium-sized egg
150 g unsalted butter 
2 tbsp clear honey 

Prepare the tins using good baking paper.
Combine the ingredients until you get slightly sticky dough. Divide it into two. Using your fingers tip put the dough onto the bottom of each tin. Turn the oven, the temperature is to be 170 degrees Celsius. 
Put the baking tins into the oven.  Bake the honey cakes for about 15  minutes until they turn golden brown colour. They will rise just a bit. Remove the tins. Leave the cakes to cool. Carefully remove the cakes and set aside. You will need one of the tins to bake a sponge.

ingredients for the sponge: 

4 medium-sized eggs, keep yolks and whites seperate
100 g icing sugar
100 g plain (all-purpose) flour 
25 ml cooking oil
3/4 tsp baking powder

Whisk the egg whites in a big mixer bowl until they turn white and fluffy just the way you would to prepare meringue. Tip sugar in the bowl and continue on whisking. Combine the whites with yolks by mixing on a very slow speed. Sieve the flour and baking powder. Tip the flour into the eggy mixture and using a spatula stir it into until finely-combined. Put the sponge batter in a tin (20 cm x 30 cm) prepared with baking paper beforehand. Put the oven on 180 degrees Celsius.
Bake the sponge for 20-25 minutes. Take it out of the oven and let it cool. 

ingredients for the custard: 

400 ml milk
2 heaped tbsp plain (all-purpose) flour 
2 heaped tbsp cornstarch (cornflour)
seeds 1/2 vanilla pod (cut lengthwise)

Pour the milk in a heavy-based saucepan along with butter, vanilla seeds and sugar. Put the saucepan on a medium heat.When the milk starts to boil tip the flours and start to whisk quickly while still cooking the custard. If any lumps occur, blender it after removing the saucepan off  cooker. 

Additionally you need: 
1/2 jar strawberry jam 
1/2 jar blackcurrant jam, 
both combined

To assemble the cakes

Put one of the honey cake onto the bottom of the tin (20 cm x 30 cm, again) and spread half of the strawberry-blackcurrant jam. Pour half of the hot custard onto the first spread-with-jam honey cake. Cover this layer with sponge. Pour the rest of the custard onto the sponge. Cover it with the second honey cake. Spread the rest of the jam onto it.

ingredients for the ganache: 

200 g milk chocolate 
120 ml single cream

Break the chocolate and tip it in a medium-sized heat-proof container. Pour the cream all over the chocolate. Set your microwave on a medium for 1-2 mins. Heat the chocolate. Take it out and give it a good stir. Put it back in and repeat the same. The ganache should be silky smooth. Decorate your cake with it. 
Let the cake rest for at least 12 hours before serving and then enjoy!
